Banana Gingerbread Muffins

Wholesome banana-oat muffins using Betty Crocker® mix, 5 ingredients, ready in 25 minutes!
Ingredients:
  • 1 box (14.5 oz) Betty Crocker™ Gingerbread Cake & Cookie Mix
  • 1 cup mashed very ripe bananas (2 medium)
  • 3/4 cup quick-cooking or old-fashioned oats
  • 3/4 cup water
  • 2 eggs
Instructions:
  • Preheat the oven to 375°. Lightly grease the bottoms of 16 medium muffin cups (2 1/2x1 1/4 inches) with shortening, or use foil or paper baking cups.
  • Combine the gingerbread mix and remaining ingredients in a large bowl, stirring until the mixture is perfectly blended. Distribute the batter evenly among the muffin cups.
  • Bake for 15 to 20 minutes or until a toothpick inserted in the center comes out clean. Remove from pan to a wire rack and serve warm or cooled.
