Vegan Blueberry and Banana Oatmeal Muffins

Wholesome vegan muffins with almond milk, banana, blueberries, and rolled oats. Great for snacking!
Ingredients:
  • 2 cups almond milk
  • 1 medium ripe banana, mashed
  • 3 cups rolled oats
  • 0.25 cup brown sugar
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon sea salt
  • 2 cups blueberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 12-cup muffin tin with paper liners.
  • In a large mixing bowl, combine almond milk, mashed banana, and vanilla extract until smooth. Mix in oats, brown sugar, cinnamon, baking powder, and sea salt until well combined. Gently fold in blueberries, then evenly distribute the batter into the muffin cups.
  • Bake in the preheated oven for 25 minutes until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
