Make quick and delicious vegan blueberry muffins with soy milk, margarine, brown sugar, and applesauce.
Ingredients:
  • 1 cooking spray
  • 2 cups fresh blueberries
  • 2 cups all-purpose flour
  • 1 cup lightly packed brown sugar
  • 0.5 cup unsweetened applesauce
  • 0.5 cup soy milk
  • 0.25 cup soy margarine
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then prepare a mini muffin tin with paper liners or cooking spray for 12 muffins.
  • Combine blueberries, flour, sugar, applesauce, soy milk, soy margarine, baking powder, vanilla extract, and salt in a bowl. Fill muffin cups 3/4 full with the batter.
  • Bake in the preheated oven for about 35 minutes until the tops are firm. Then, cool slightly on a rack.
