Make delicious vegan blueberry muffins with soy milk, applesauce, dates, and oats for a moist, sweet, and textured treat.
Ingredients:
  • 0.75 cup soy milk
  • 0.75 cup water
  • 12 dates, pitted
  • 1.5 tablespoons flax seeds
  • 2 cups rolled oats, ground
  • 1 tablespoon brown sugar
  • 0.75 cup applesauce
  • 1 cup fresh blueberries
Instructions:
  • Mix together soy milk, water, dates, and flax seeds in a bowl.
  • Preheat the oven to 400°F (200°C) for a perfect dish every time.
  • In a large bowl, mix together ground oats, brown sugar, baking powder, and cinnamon.
  • In a blender, mix the date mixture, applesauce, and vanilla extract until smooth. Pour it into the bowl with the oat mixture and stir until fully combined. Gently fold in the blueberries before pouring the batter into a 12-cup muffin tin.
  • Bake in the preheated oven for around 20 minutes, or until the tops spring back when lightly pressed. Allow to cool in the tin.
