Delicious vegan blueberry muffins made with applesauce, vanilla soy yogurt, and oil instead of traditional ingredients. Enjoy them fresh for maximum flavor!
Ingredients:
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup white sugar
  • 2 tablespoons white sugar
  • 0.5 cup unsweetened applesauce
  • 0.5 cup vanilla soy yogurt
  • 0.25 cup vegetable oil
  • 2 teaspoons vanilla sugar
  • 1.75 cups fresh blueberries
  • 2 tablespoons brown sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare your 12-cup muffin tin by either greasing it up or lining the cups with paper liners.
  • In a large bowl, mix flour, baking powder, baking soda, and salt. In another bowl, combine 1/2 cup plus 2 tablespoons of white sugar, unsweetened applesauce, yogurt, oil, vanilla sugar, and vanilla extract. Gently fold the wet mixture into the dry ingredients until just combined. Carefully fold in blueberries. Enjoy!
  • Fill the prepared muffin cups with batter, ensuring they are 3/4 full, then sprinkle with brown sugar.
  • Bake in the preheated oven for 18 to 22 minutes until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
