Moist vegan blueberry muffins with applesauce, soy milk, margarine, whole wheat flour, and blueberries.
Ingredients:
  • 2 cups whole wheat flour
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1.5 cups blueberries
  • 0.5 cup unsweetened applesauce
  • 0.5 cup soy milk
  • 0.25 cup margarine
Instructions:
  • Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper cups.
  • Combine flour, sugar, baking powder, and salt in a bowl. Fold in blueberries, applesauce, soy milk, and margarine. Divide batter evenly into each muffin cup, filling them about 3/4 full.
  • Bake in the oven preheated to perfection until the tops are beautifully golden brown and firm, for approximately 35 minutes.
