Prepare quick and simple vegan sushi the night before for a delicious, portable lunch with wasabi and soy sauce.
Ingredients:
  • 1 (7.4 ounce) package precooked brown rice
  • 2 sheets nori (dry seaweed)
  • bamboo mat
  • 1 cucumber, sliced into thin strips
  • 1 carrot, sliced into thin strips
Instructions:
  • Transfer the cooked rice to a microwave-safe bowl, partially cover it, and microwave on high for about 1 minute until hot.
  • Lay a nori sheet on the bamboo mat. Spread half of the rice evenly on the nori sheet, using a bit of water on your hands. Add half of the cucumber and carrot slices on the top half of the rice. Roll the nori sheet tightly around the rice and veggies with the help of the bamboo mat. Repeat the process with the remaining nori sheet, rice, and veggies.
  • Slice each roll into 6 bite-sized pieces and chill in the refrigerator until cold, approximately 20 minutes.
