Cherry and berry slushies

Whip up refreshing low-fat fruit slushies to enjoy at the beach for a perfect summer day.
Ingredients:
  • 185ml (3/4 cup) water
  • 75g (1/3 cup) caster sugar
  • 300g pitted fresh cherries or thawed frozen cherries
  • 250g (1 punnet) strawberries, washed, hulled
Instructions:
  • In a small saucepan, mix together water, sugar, and lemon juice over low heat, stirring until the sugar dissolves, about 1 minute (refer to microwave tip).
  • Combine the sugar mixture, cherries, and strawberries in a food processor or blender, and blend until smooth. Transfer the mixture to a shallow freezer-proof container and freeze for 3-4 hours, or until nearly frozen.
  • Use a spoon to crumble the mixture, transfer it to a food processor, and blend until smooth. Divide the mixture into four 250ml (1-cup) plastic, freezer-safe cups. Cover with foil and freeze overnight. For the microwave method, combine water, sugar, and lemon juice in a microwave-safe jug or bowl. Microwave on High for 1 minute, stirring occasionally, until sugar is dissolved.
