Indulge in delicious coconut-chocolate chip breakfast cookies with maple nut granola.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 cup brown sugar
  • 0.5 cup butter
  • 2 eggs
  • 1 cup maple nut granola
  • 1 cup shredded coconut
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a large cookie sheet by lining it with parchment paper.
  • Combine flour, baking powder, ginger, and baking soda in a small bowl and keep it aside.
  • Cream together the brown sugar and butter until smooth. Incorporate the eggs using an electric mixer until creamy. Add the flour mixture and mix until a smooth dough forms. Fold in the granola, coconut, and chocolate chips.
  • Spoon dough onto the cookie sheet, spacing them 2 inches apart.
  • Bake for 10 minutes until the top is lightly browned. Then, transfer to a wire rack to cool completely.
