Maple-Nut Biscotti

Maple-flavored Italian cookies with a sweet candy coating drizzle.
Ingredients:
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter or margarine, softened
  • 1 teaspoon maple flavor
  • 3 eggs
  • 3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup chopped walnuts
  • 1 teaspoon vegetable oil
  • 4 oz vanilla-flavored candy coating (almond bark), melted
Instructions:
  • Preheat oven to 350°F and lightly grease a cookie sheet with shortening or cooking spray.
  • In a large bowl, use an electric mixer to beat the sugars and butter until creamy, about 3 minutes. Mix in the maple flavor and eggs. Add the flour, baking powder, and walnuts, stirring well. Divide the dough in half and shape each half into a 10-inch roll. Place the rolls 5 inches apart on a cookie sheet and flatten to a 3-inch width.
  • Bake for 20 to 30 minutes until edges turn golden brown and the mixture sets. Transfer from baking sheet to a cooling rack and let cool for 10 minutes. Use a serrated knife to slice the rolls diagonally into 1/2-inch pieces. Arrange slices with the cut side downward on ungreased cookie sheets.
  • Bake the cookies for 5 to 10 minutes until lightly browned and dry. Flip them over and bake for an additional 5 to 8 minutes until lightly browned and dry. Transfer to a cooling rack and let them cool completely for about 15 minutes.
  • Mix the oil into the melted candy coating until smooth. Drizzle the mixture over the biscotti and let it sit until the coating is completely dry. Store the biscotti in an airtight container to keep them fresh.
