Ingredients:
  • 270g rolled oats
  • 80g almond
  • 50g walnut
  • 50g pepitas
  • 35g sunflower seeds
  • 33.60 gm coconut oil, melted
  • 54.00 gm maple syrup
  • 4.40 gm vanilla extract
  • 25g shredded coconut
  • Milk, to serve
  • Mixed berries, to serve
  • Sliced banana, to serve
Instructions:
  • Preheat your oven to 180°C, then gently grease a roasting pan and line it with baking paper.
  • In a large bowl, mix together oats, almonds, walnuts, pepitas, and sunflower seeds. In a separate container, whisk together coconut oil, maple syrup, and vanilla. Pour the mixture into the bowl with the oats and stir until evenly combined.
  • Spread the mixture evenly on the prepared pan and bake for 20 minutes, stirring every 5 minutes until golden. In the last 5 minutes of baking, sprinkle shredded coconut on top. Allow it to cool completely in the pan, then transfer to an airtight container.
  • Serve the mixture in individual bowls along with milk, berries, and banana.
