Blueberry breakfast granola bars recipe

Whip up these scrumptious blueberry granola bars for a tasty and wholesome breakfast treat. Bursting with sweet flavor in every bite - delicious!
Ingredients:
  • 225g plain flour
  • 110g rolled oats
  • 40g shredded coconut
  • 2.50 gm ground cinnamon
  • 140g Nuttelex spread
  • 65g granola
  • 160g jam
  • 125g blueberries
Instructions:
  • Preheat the oven to 180°C. Grease a 16cm x 26cm slice pan and line the base and two long sides with baking paper, leaving overhang on the sides.
  • Combine half of the flour, oats, coconut, cinnamon, and spread in a food processor until just combined. Press the mixture evenly into the prepared pan using the back of a spoon. Bake for 10 minutes until lightly golden.
  • In a bowl, mingle the granola with the remaining flour, oats, coconut, and cinnamon. Add the leftover spread and gently rub it into the mixture using your fingertips until it resembles coarse breadcrumbs.
  • Evenly coat the base of the slice with jam, then add fresh blueberries. Sprinkle the granola mixture evenly over the blueberries. Bake for 30 minutes or until golden brown. Allow it to cool completely in the pan before cutting into pieces.
