Blueberry coffeecake with layers of blueberry pie filling, fresh blueberries, and crumb topping for a decadent breakfast delight.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 cup butter, melted
  • 0.5 cup milk
  • 0.5 cup all-purpose flour
  • 3 tablespoons butter, melted
  • 1 (21 ounce) can blueberry pie filling
  • 0.25 teaspoon lemon extract
  • 0.25 cup fresh blueberries
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 9x9-inch baking pan.
  • In a bowl, combine 1 1/4 cups flour, 1/2 cup white sugar, baking powder, baking soda, and salt using a fork. Then mix in 1/2 cup butter, milk, egg, and vanilla extract until well blended. Pour batter into prepared pan.
  • In a bowl, mix 1/2 cup flour, 1/4 cup white sugar, and 3 tablespoons of butter using a fork until it forms a crumbly texture. Sprinkle half of the crumbs over the batter.
  • Combine the blueberry pie filling and lemon extract in a bowl. Spread over the crumb topping, then sprinkle blueberries on top. Finish by adding the remaining crumb topping.
  • Bake in the oven until the cake is beautifully golden brown, approximately 1 hour.
