Blueberry cobbler, perfect with vanilla ice cream for a delightful summer treat.
Ingredients:
  • 3 cups fresh blueberries
  • 0.5 lemon
  • 1.125 cups white sugar
  • 4.5 tablespoons butter, softened
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.75 cup whole milk
  • 1.5 cups white sugar
  • 0.75 teaspoon salt
  • 1.5 tablespoons cornstarch
  • 1 pinch ground cinnamon
  • 0.75 cup boiling water
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease an 11x7 inch baking dish.
  • Cover the bottom of the baking dish with a layer of blueberries and drizzle the lemon juice over them. In a medium bowl, mix together the butter and 1 1/8 cups sugar until smooth. Combine flour and baking powder in another bowl, then add them alternately with the milk to the butter mixture until smooth. The batter will be thin. Pour the batter over the blueberries, spreading it evenly.
  • Combine 1 1/2 cups of sugar, salt, and cornstarch in a small bowl. Sprinkle over the batter, dust with a pinch of cinnamon, and pour boiling water over the dish.
  • Bake until golden brown in the preheated oven for about 45 minutes.
