Delicious berry and whole grain cereal bread, packed with calcium for healthy bones and teeth.
Ingredients:
  • 2 cups crunchy whole grain wheat flakes cereal
  • 3/4 cup water
  • 1 tablespoon grated orange or lemon peel
  • 1/4 cup orange juice
  • 2 tablespoons canola or soybean oil
  • 1/2 teaspoon vanilla
  • 1 egg or 1/4 cup fat-free egg product
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries (do not thaw)
Instructions:
  • Preheat oven to 350°F. Grease the bottom of a 9x5-inch loaf pan with shortening or cooking spray. Place cereal in a plastic bag and gently crush with a rolling pin. Set aside.
  • Combine water, orange peel, orange juice, oil, vanilla, and egg in a large bowl until well mixed. In a separate medium bowl, combine crushed cereal, flour, sugar, baking powder, baking soda, and salt, then fold into the large bowl mixture. Gently fold in blueberries before pouring the batter into the pan.
  • Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then gently remove the loaf from the pan onto a cooling rack. Allow it to cool completely for at least 1 hour before slicing.
