Irresistible homemade granola blends nuts, oats, and zesty crystallized ginger for a perfect balance of sweet and spicy flavors.
Ingredients:
  • 2 cups rolled oats
  • 2 cups quick-cooking oats
  • 0.25 cup chopped pecans
  • 0.25 cup chopped walnuts
  • 0.25 cup chopped almonds
  • 0.25 cup pepitas
  • 0.5 cup maple syrup
  • 0.25 cup coconut oil, melted
  • 0.25 cup chopped crystallized ginger
  • 2 teaspoons ground turmeric
  • 1.5 teaspoons ground ginger, or to taste
  • 1 teaspoon ground cinnamon
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground cardamom
  • 0.125 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 325°F (165°C) to create the perfect cooking environment.
  • Combine rolled oats, quick-cooking oats, pecans, walnuts, almonds, and pepitas, then evenly spread the mixture on a sheet pan.
  • After baking in the preheated oven for 10 minutes, transfer to a large mixing bowl and reduce oven temperature to 225°F (110°C).
  • Combine maple syrup, coconut oil, crystallized ginger, turmeric, ground ginger, cinnamon, salt, cardamom, and pepper in a small bowl. Pour this flavorful mixture over the oats and nuts, ensuring everything is well coated. Spread the mixture back onto the baking sheet.
  • After baking for 30 minutes, let the granola sit in the turned-off oven for an additional hour.
  • Take out of the oven and allow it to cool to room temperature for approximately 30 minutes.
