Indulge in nutritious homemade granola paired with sweet roasted strawberry yogurt for a delightful breakfast treat.
Ingredients:
  • 360g rolled oats
  • 110g bran cereal
  • 80g seed mix
  • 60g walnut
  • 70g almond
  • 95g dried fig
  • 5.00 gm ground cinnamon
  • 1 tsp vanilla bean paste
  • 80g butter
  • 250ml maple syrup
  • 250g strawberries, washed, hulled, halved
  • 20.00 gm caster sugar
  • 21.00 gm orange juice
  • 500g Greek Style Yoghurt
Instructions:
  • Heat your oven to 180 degrees Celsius.
  • In a large bowl, mix together oats, bran, seeds, walnuts, almonds, figs, cinnamon, and vanilla.
  • Split butter and maple syrup evenly between 2 roasting pans. Bake in the oven for 5 minutes until butter is melted and bubbling. Mix half of oat mixture into each pan and stir well. Bake for 5 minutes, stir, and bake for another 5 minutes. Repeat twice until granola is lightly toasted. Let cool completely before enjoying.
  • For the roasted strawberry yoghurt, prepare by lining an oven tray with baking paper. Arrange strawberries on the tray, sprinkle with sugar, and drizzle with orange juice. Roast in the oven for 15 minutes until tender and juicy. Let cool completely before using.
  • In a medium bowl, gently crush strawberries with a fork. Add yogurt and fold gently to mix.
  • Top a bowl of creamy strawberry yogurt with a generous sprinkle of crunchy granola.
