Spice up your party with pumpkin seed beer brittle - a sweet and crunchy treat with a kick of cayenne and cinnamon.
Ingredients:
  • 1 teaspoon vegetable oil
  • 0.75 cup raw cleaned whole pumpkin seeds
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground cayenne pepper
  • 2.75 cups white sugar
  • 1 (12 fluid ounce) can or bottle beer
Instructions:
  • In a skillet over medium heat, brown the pumpkin seeds in vegetable oil for about 10 minutes. Transfer to a bowl and toss with cinnamon and cayenne pepper. Set aside. Prepare a jellyroll pan by greasing it with butter and keep it nearby the stove.
  • Grease a jellyroll pan and place it next to the stove.
  • In a 2-quart saucepan over medium heat, mix the sugar and beer until boiling and the sugar dissolves. Cook and stir occasionally until a candy thermometer reads 300 degrees F (150 degrees C), about 40 minutes. The mixture will form brittle strings when dripped into ice water.
  • Take the candy off the heat, swiftly fold in the pumpkin seeds, and carefully pour the mixture into the jellyroll pan to create a thin layer. Let it cool before breaking into bite-size pieces and storing in an airtight container.
