Transform pumpkin seeds into a tasty snack year-round by roasting them with your favorite flavors like cumin and coriander or cinnamon and ginger. Create a versatile treat from pumpkin carving leftovers in just a few easy steps.
Ingredients:
  • 1 small (6 lb) fresh-well-ripened pumpkin
  • Nonstick cooking spray
  • 1/2 teaspoon salt
Instructions:
  • Preheat the oven to 350°F. Cut the pumpkin in half, then scoop out the membrane and seeds. Keep some pulp on the seeds for added flavor, and avoid rinsing them.
  • On a rimmed baking sheet measuring 15x10x1 1/2 inches, evenly distribute the seeds. Drizzle the seeds with cooking spray and season generously with salt.
  • Bake until golden brown, then allow to cool.
