Chilli jam pork with beans and basil recipe

10-Minute Spicy Chilli Jam Pork Stir Fry with Beans and Basil - a quick and delicious dish for busy nights.
Ingredients:
  • 3cm-piece fresh ginger
  • 1 garlic clove
  • 18.20 gm peanut oil
  • 500g pork mince
  • 1 red onion
  • 200g green beans
  • 250g pkt microwave 90-second jasmine rice
  • 85g (1 ⁄4 cup) Thai Chilli Jam
  • 42.00 gm light soy sauce
  • 55g (1/3 cup) roasted peanuts
  • 1 long fresh red chilli
  • Fresh Thai basil sprigs, to serve
Instructions:
  • Heat a large frying pan over high heat.
  • Prepare the ginger by peeling and finely grating it, and crush the garlic cloves.
  • Heat the pan until sizzling, then pour in the oil followed by the pork. Sauté while using a wooden spoon to break up the meat, until nicely browned, about 2-3 minutes.
  • Next, slice the red onion into wedges and chop the green beans into 5cm lengths.
  • Cook the ginger, garlic, onion, and beans in the pan for 2 minutes until the onion softens slightly, tossing occasionally.
  • Cook the jasmine rice in the microwave according to the instructions on the packet while the bean mixture is cooking.
  • Combine the chilli jam, soy sauce, and chicken stock with the pork, tossing until fully mixed. Serve the rice and chilli jam pork on plates or a platter. Roughly chop the peanuts and slice the chilli, then sprinkle them with basil over the pork before serving.
