Versatile spicy tomato & chili jam enhances seafood dishes deliciously.
Ingredients:
  • 1kg ripe tomatoes, peeled, chopped
  • 500g granulated sugar
  • 63.00 gm lemon juice
  • 82.50 ml white wine vinegar
  • 6 long red chillies, sliced (leave the seeds in if you like it hot)
  • 4.80 gm sea salt
  • 48.80 gm fish sauce
Instructions:
  • Combine ripe, juicy tomatoes with a hint of sugar in a bowl, then let the flavors harmonize and intensify at room temperature overnight.
  • Pour everything into a pan, stir occasionally, and bring to a boil. Lower the heat and let it simmer for an hour until it thickens to perfection.
  • Garnish with chargrilled squid, rocket, and lemon wedges before serving.
