Chilli jam recipe

Create spicy-sweet chilli jam for versatile dipping, sandwich topping, or stir-fry enhancement.
Ingredients:
  • 6 long fresh red chillies, coarsely chopped
  • 1 brown onion, coarsely chopped
  • 2 garlic cloves, coarsely chopped
  • 125ml (1/2 cup) water
  • 450g (2 cups) white sugar
  • 80ml (1/3 cup) Italian White Wine Vinegar
  • 6.10 gm fish sauce (see note)
Instructions:
  • Finely chop the chili, onion, and garlic in a food processor with water.
  • Pour the mixture into an 18cm saucepan and add the sugar, vinegar, lime juice, and fish sauce. Stir gently over medium-low heat until the sugar is fully dissolved.
  • - Turn up the heat to medium-high and let it come to a boil. - Lower the heat to medium-low and allow it to simmer for 35-40 minutes, or until the jam achieves the desired consistency when tested (refer to tip). - Transfer the hot jam into sanitized, dry jars. - Seal the jars and carefully flip them over for 2 minutes. - Leave them to cool.
