Delicious sausage rolls made with high-quality pork, fennel seeds, buttery puff pastry, and spicy chilli jam on the side.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 brown onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 bunch fresh sage, chopped
  • 10g crushed fennel seeds
  • Pinch of paprika
  • Pinch of cayenne pepper
  • 300g good-quality pork mince
  • 1 egg yolk
  • 2 sheets frozen butter puff pastry, partially thawed, cut into eight 12cm squares
  • 1 egg, lightly whisked
  • 50ml extra virgin olive oil
  • 6 red capsicums, chargrilled, peeled, seeded, chopped
  • 4 star anise
  • 1 cinnamon stick
  • 100g brown sugar
  • 150ml Italian Red Wine Vinegar
  • 50ml hot sauce
  • 340g btl red peppers, drained, processed
Instructions:
  • Heat oil in a saucepan over medium heat and sauté capsicum, star anise, and cinnamon for 2 minutes. Add sugar, vinegar, sauce, and peppers. Reduce heat to low and simmer for 15-20 minutes until the mixture is reduced by half. Season to taste and let it cool.
  • In a frying pan over low heat, sauté onion, garlic, sage, and fennel in oil for 5 minutes. Add paprika and cayenne pepper, then allow to cool.
  • Combine mince, onion mixture, egg yolk, and seasonings in a bowl. Shape the mixture into eight 12cm logs, then chill for 30 minutes.
  • First, preheat your oven to 200°C/180°C fan forced. Next, generously spoon the savory pork mixture down the center of each pastry square. Gently fold the pastry over the filling and firmly press the edges to seal. Arrange the pastries seam-side down on a lined baking tray. Lightly brush the pastries with beaten egg for a beautiful golden finish. Bake them for 25-30 minutes until perfectly cooked. Serve these delicious treats with a side of jam to enjoy a wonderful meal.
