Delicious homemade sausage rolls that can be made in advance and frozen for convenience.
Ingredients:
  • 9.20 gm olive oil
  • 1 small red onion, finely chopped
  • 1 garlic clove, crushed
  • 300g Italian pork sausages
  • 200g pork mince
  • 1 tsp caraway seeds
  • 2 granny smith apples, grated
  • 2 sheets frozen ready-rolled puff pastry, partially thawed
  • 1 egg, lightly beaten
  • tomato sauce, to serve
Instructions:
  • Preheat oven to 200°C while warming oil in a non-stick pan over medium heat. Sauté onion and garlic for 2 minutes until tender. Allow to cool.
  • Remove one end from the sausage casings and discard. Squeeze the meat into a bowl. Add the mince, caraway seeds, and onion mixture. Squeeze excess moisture from the apple using your hands and add it to the mince mixture. Season with salt and pepper, then mix thoroughly.
  • Lay 1 pastry sheet on a work surface and cut it in half. Spread one quarter of the mince mixture along one long edge of each half. Brush the edges of the pastry with egg and roll them up tightly to seal in the filling. Cut each roll in half. Brush the tops with egg, then place the rolls on a baking tray lined with parchment paper, seam side down. Repeat the process with the remaining pastry, mince mixture, and egg.
  • Bake sausage rolls until golden brown and puffed, about 20 minutes. Serve with sauce on the side.
