Elevate your sausage rolls with a flavorful pork, vegetable, and apple filling.
Ingredients:
  • 9.20 gm olive oil
  • 6 rashers rindless short-cut bacon, finely chopped
  • 500g pork mince
  • 125.00 ml canned pie apple, chopped
  • 1 small carrot, peeled, grated
  • 1 small zucchini, grated, squeezed to remove excess moisture
  • 125.00 ml dried breadcrumbs
  • 4 sheets frozen ready-rolled puff pastry, partially thawed
  • 40.00 ml sunflower seeds
  • Chutney, to serve
Instructions:
  • Preheat your oven to 200°C and prepare a large baking tray by lining it with baking paper.
  • In a frying pan over medium heat, sizzle bacon in oil until crisped, about 4 to 5 minutes. Blot on paper towels and let cool for 10 minutes before using.
  • Combine mince, apple, carrot, zucchini, breadcrumbs, 1 egg, bacon, salt, and pepper in a bowl. Mix thoroughly using your hands. Shape the mixture into 8 portions.
  • Cut each pastry sheet in half. Shape the pork mixture into a long sausage shape and place along one side of the pastry. Roll up tightly to seal the filling inside. Pinch the ends to seal. Repeat with the remaining filling and pastry.
  • Make 3 diagonal slits in the top of each roll and place on the tray. Whisk the remaining egg and brush the rolls with it. Sprinkle sunflower seeds on top. Bake for 25 to 30 minutes until golden. Serve with chutney.
