Pork and apple sausage rolls

Elevate your party with a delicious and classic sausage roll!
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, finely chopped
  • 90g carrot
  • 90g zucchini
  • 20.00 ml chopped fresh sage leaves
  • 3 garlic cloves, crushed
  • 225g apple
  • 350g pork mince
  • 125.00 ml low-fat grated cheddar
  • 1 egg yolk
  • 250.00 ml fresh wholemeal breadcrumbs
  • 8 sheets filo pastry
  • Olive oil cooking spray
  • 12.00 gm sesame seeds
  • Steamed vegetables, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced and line a large baking tray with baking paper.
  • Heat olive oil in a non-stick pan over medium heat. Sauté onion, carrot, zucchini, sage, and garlic for 5 minutes until onion is soft. Add apple and cook for 3-5 minutes until softened. Transfer to a large bowl and let cool.
  • Combine the mince, cheddar, egg yolk, and breadcrumbs with the onion mixture. Season generously with pepper and mix thoroughly.
  • Lay down a sheet of filo on a flat surface and gently spray with oil. Place another sheet of filo on top. Repeat this process with the oil spray and the rest of the filo sheets. Spoon the mince mixture along one long edge of the pastry. Roll up the pastry to seal in the filling. Cut the roll in half and place the halves on the baking tray, seam side down.
  • Brush rolls with a delicate mist of oil, then generously sprinkle with sesame seeds. Bake in the oven for 25 minutes, or until beautifully golden and satisfyingly crisp. Allow to rest for 10 minutes before cutting into slices and serving alongside steamed vegetables.
