Ingredients:
  • 1kg pontiac potatoes, peeled, cut into even chunks (see note)
  • 100ml milk
  • 50g butter
  • 40ml (2 tbsp) thin cream or creme fraiche
Instructions:
  • Cook the potatoes until tender, then drain and transfer back to the pot. Season generously, and stir in the milk, butter, and cream. Utilize an electric whisk to mix slowly initially, then increase speed until creamy and smooth.
