Create fluffy, crispy cheesy mashed potato pancakes - perfect for any meal or snack!
Ingredients:
  • 2 cups leftover mashed potatoes
  • 1 large egg
  • 1/3 cup all-purpose flour
  • 2 tablespoons chives, minced
  • 1 cup cheddar cheese, grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup neutral oil, or butter, for frying
  • Sour cream, for serving
Instructions:
  • Prepare the pancake mixture by mixing mashed potatoes, egg, flour, chives, cheese, salt, and pepper in a bowl. Ensure the mixture is sticky enough to hold its shape when formed into a patty; if it's too runny, gradually add more flour until you achieve the desired consistency.
  • Prepare your cooking area: Lay out a large plate lined with paper towels to transfer the pancakes to as you cook them.
  • To fry the potato pancakes, heat oil in a large skillet over medium heat until it reaches 325°F or sizzles when flour is sprinkled. Using lightly wet hands to prevent sticking, shape 1/4 cup of the pancake mixture into a 1/2-inch thick disk and place in the skillet. Repeat for 4-5 pancakes. Fry for 3-4 minutes per side until browned and crispy, then flip and cook for an additional 3-4 minutes.
  • Drain and plate the potato pancakes on a paper towel-lined sheet. Continue until all the pancakes are cooked. Serve warm with a dollop of sour cream.
