Scallion Mashed Potato Pancakes

Turn leftover mashed potatoes into delicious scallion potato pancakes for a tasty breakfast.
Ingredients:
  • 2 cups leftover mashed potatoes
  • 2 large eggs
  • 2 teaspoons sesame oil, divided
  • salt and ground white pepper to taste
  • 1 tablespoon vegetable oil
  • 4 large scallions, chopped
  • 0.25 cup vegetable oil, or as needed
Instructions:
  • Combine mashed potatoes, flour, eggs, 1 teaspoon sesame oil, salt, and white pepper in a medium mixing bowl until a slightly doughy consistency is achieved, allowing you to easily form a ball in your hand.
  • In a large frying pan over medium heat, sizzle the scallions in 1 tablespoon of vegetable oil until softened, around 5 minutes. Incorporate them into the potato mixture until well combined.
  • Add enough vegetable oil to the frying pan to create a 1/4-inch depth, then drizzle in the remaining sesame oil.
  • Shape potato mixture into 1/4 cup-sized balls, then flatten into pancakes. Fry in batches until golden and slightly firm, approximately 5 minutes. Drain on paper towels. Add oils as needed before each batch. Serve hot.
