Transform leftover mashed potatoes into delicious cheesy potato pancakes, perfect for a satisfying breakfast or brunch when paired with fried eggs.
Ingredients:
  • 2 cups mashed potatoes
  • 0.25 cup shredded Cheddar cheese
  • 1 large egg, beaten
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 1/2 cup all-purpose flour, or as needed
Instructions:
  • Combine potatoes, cheese, beaten egg, and salt in a medium bowl until fully incorporated. If mixture is too wet, add flour gradually to achieve desired consistency.
  • Heat butter on a large griddle over medium heat until melted. Spoon 1/4 cup of potato mixture onto the hot griddle and flatten each pancake to 1/2-inch thickness using a spatula. Cook until both sides are golden brown, approximately 5 minutes each. Serve immediately.
