Turkey Pot Pie with Potato Biscuit Crust

Whip up an easy pot pie using leftover turkey or rotisserie chicken for a delicious dinner option.
Ingredients:
  • 1 1/2 cups cubed cooked turkey or chicken
  • 2 cups frozen peas and carrots
  • 1 medium onion, chopped (1/2 cup)
  • 1 jar (12 oz) turkey gravy
  • 2/3 cup Betty Crocker™ mashed potatoes
  • 2/3 cup hot water
  • 1 1/2 cups Original Bisquick™ mix
  • 1/3 cup milk
  • 1 tablespoon freeze-dried chives
Instructions:
  • Preheat oven to 375°F. In a 3-quart saucepan over medium heat, bring turkey, frozen vegetables, onion, and gravy to a boil, stirring frequently. Boil and stir for 1 minute. Keep warm.
  • Combine dry potatoes with hot water in a medium bowl and let it sit until the water is absorbed. Stir in the rest of the crust ingredients until a dough forms. Transfer the dough onto a surface dusted with Bisquick mix, coat it gently, then shape it into a ball. Knead the dough 10 times, pat it into an 11x7-inch rectangle, and fold it into thirds.
  • Pour the flavorful turkey mixture into an ungreased 11x7-inch (2-quart) glass baking dish, then gently lay the dough over the top.
  • Bake until the crust turns a beautiful golden brown, about 30 to 35 minutes.
