Delicious turkey pot pie with mashed potato crust, made from holiday leftovers like turkey, mashed potatoes, and gravy packets.
Ingredients:
  • 1 pastry for a single pie crust
  • 4 cups cubed cooked turkey
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 2 cups water, divided
  • 2 (1.2 ounce) packages turkey gravy mix
  • 1 (16 ounce) package frozen mixed vegetables
  • 4 cups mashed potatoes
Instructions:
  • Preheat your oven to 375°F (190°C) for perfect cooking temperature.
  • Line a 9x13-inch baking dish with pie crust, top with turkey meat, and spoon cream of chicken soup over turkey.
  • In a saucepan over medium heat, bring 1 cup of water to a boil. Add mixed vegetables and cook until tender, about 5 minutes. Whisk dry gravy mix with remaining 1 cup of water, then stir into vegetables. Bring to a boil, then simmer until thickened for about 1 minute. Pour vegetable and gravy mixture over the cream of chicken soup layer in the pan and spread mashed potatoes on top of the pie.
  • Bake in the oven until the filling bubbles, approximately 45 minutes.
