Creamy mashed potato and chive bake

Creamy mashed potatoes bake topped with crispy, golden gruyere crust.
Ingredients:
  • 2kg Sebago potatoes, peeled, halved
  • 80g butter, softened
  • 250g cream cheese, softened
  • 257.50 gm milk
  • 62.50 ml fresh chives, chopped
  • 125.00 ml gruyere cheese, grated
Instructions:
  • Prepare your 8-cup ceramic baking dish by greasing it. Preheat the oven to 200C/180C fan-forced.
  • In a large saucepan, simmer the potato in cold water until tender, about 20 minutes. Drain and return the potato to the pan, tossing over low heat until excess water evaporates, for 1 to 2 minutes.
  • Mash potato using a potato masher until smooth. Mix in butter and cream cheese. Gradually stir in milk, add chives, and season with salt and pepper. Combine well.
  • Spread the potato evenly in the baking dish, then generously sprinkle with cheese. Bake until golden and crispy on top, about 30 minutes. Serve and enjoy!
