Creamy mashed potato and cheese bake

Impress everyone with this decadent cheesy mashed potato casserole.
Ingredients:
  • 1.5kg brushed potatoes, peeled, chopped
  • 40g butter, softened
  • 125ml thickened cream
  • 0.63 gm ground nutmeg
  • 185ml milk
  • 40.00 ml flat-leaf parsley, chopped
  • 40g tasty cheese
  • 20g parmesan
  • Chopped flat-leaf parsley, extra, to serve
Instructions:
  • Prepare a 6-cup (1.5L) baking dish by greasing it, then preheat the oven to 200°C.
  • In a large saucepan, submerge the potato in cold water and bring it to a boil over high heat. Simmer for 15 minutes, or until the potato is tender. Drain the water and return the potato to the pan.
  • Mash potatoes until smooth using a potato masher. Fold in butter, cream, and nutmeg, then mash to combine. Slowly blend in milk, followed by parsley. Mix well and season to taste.
  • Spread the potatoes in the baking dish. Sprinkle cheddar and parmesan on top. Bake until golden, for about 25-30 minutes. Serve with an extra sprinkle of parsley on top.
