Cheesy Cheddar Potato Spinach Casserole: Creamy mashed potatoes and fresh spinach baked with a decadent blend of sour cream, butter, chives, and gooey melted Cheddar cheese on top.
Ingredients:
  • 7 large potatoes, peeled and cubed
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup sour cream
  • 0.25 cup butter
  • 2 tablespoons chopped green onions
  • 2 teaspoons salt
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and grease a 2-quart casserole dish.
  • In a large pot, bring salted water to a rolling boil. Add potatoes and cook until easily pierced with a fork, approximately 15 minutes. Drain excess water and mash the potatoes to your desired consistency.
  • In a large bowl, mix together mashed potatoes, spinach, sour cream, butter, green onions, salt, and pepper. Transfer the mixture into the prepared dish.
  • Bake in a hot oven for 15 minutes, then add cheese and bake for an additional 5 minutes until melted.
