Garlic and chive mash

Indulgent garlic and chive buttery mashed potatoes - perfect for a crowd!
Ingredients:
  • 1.2kg Ruby Lou potatoes, peeled, coarsely chopped (see note)
  • 2 garlic cloves, peeled
  • 80g butter, chopped
  • 250ml (1 cup) pouring cream
  • 20.00 ml finely chopped fresh chives
  • Extra butter, to serve
Instructions:
  • In a saucepan, combine potatoes and garlic, covering them with cold water. Boil over medium heat for 25 minutes until tender. Drain and return to the pan, cooking over low heat for 2-3 minutes until dry. Use a potato masher or fork to mash until smooth.
  • In a saucepan, gently melt the butter and heat the cream for about 3 minutes until the butter is melted and the cream is warm. Slowly incorporate the cream mixture into the potatoes, stirring until smooth with a wooden spoon. Season with salt and pepper, then stir in the chives. Transfer to a bowl, add a dollop of butter on top, and sprinkle with pepper.
