Buttery roasted new potatoes smashed with garlic and chives for ultimate flavor!
Ingredients:
  • 1-2 pounds new potatoes or Yukon Golds
  • 3 tablespoons unsalted butter
  • Salt
  • 1 clove garlic, minced
  • 1-2 tablespoons chives or green onion greens, minced
Instructions:
  • Bake the potatoes: Preheat the oven to 350°F. Place the potatoes in a covered oven-proof pot, dot with 1 tablespoon of butter, and bake for 20 minutes.
  • Ensure the potatoes are evenly coated with butter, sprinkle salt generously, then return to the oven covered and bake for 45 minutes to an hour based on size.
  • Check for doneness by piercing a potato with a fork. If the fork goes in easily, they are ready.
  • Once the potatoes are soft, remove from the oven and gently crush them with a potato masher. Mix in garlic and remaining butter, season with salt to taste, and garnish with chives before serving.
