Smashed cucumber pickle

Palate-awakening, authentic flavored pickle.
Ingredients:
  • 2 (about 300g) Lebanese cucumbers, trimmed
  • 7.20 gm sea salt flakes, plus a pinch, extra
  • 1 long fresh red chilli, deseeded, sliced
  • 3cm piece fresh ginger, cut into matchsticks
  • 2 garlic cloves, finely grated
  • 2 tsp Chinese black vinegar or cider vinegar
  • 9.00 gm white sugar
  • 1 tsp Sesame Oil
Instructions:
  • Gently crush the cucumber using a rolling pin, then chop it coarsely and transfer it to a bowl. Sprinkle with salt and let it sit for 1 hour to release its juices, stirring occasionally. Rinse the cucumber and pat it dry with paper towel before transferring to a serving bowl.
  • Combine chili, ginger, garlic, vinegar, and sugar in a bowl. Season with an extra pinch of salt. Mix well and let sit for 15 minutes to enhance the flavors. Finish with a drizzle of sesame oil.
