Quick and flavorful Chinese cucumber salad adds a sweet, tart, and spicy kick to any meal.
Ingredients:
  • 2 English or Chinese cucumbers
  • 2 teaspoons kosher salt
  • 1 teaspoon light brown sugar
  • 2 tablespoons Zhenjiang or Chingkiang vinegar
  • 2 teaspoons Chinese light soy sauce
  • 1 to 2 teaspoons chili crisp
Instructions:
  • Peel and crush the cucumbers: Peel the cucumbers, then place them on a cutting board and gently crush them with a flat side of a cleaver or a wooden rolling pin until they are almost split in half lengthwise or broken into long chunks. Work with one cucumber at a time, applying firm pressure from end to end until the cucumber flattens slightly and starts to break apart along the sides.
  • Dice the cucumber into 1 to 1 1/2-inch chunks and transfer to a medium bowl.
  • Season the cucumbers: Sprinkle salt over the cucumbers and mix well using chopsticks or a wooden spoon. Allow the cucumbers to rest for 10 minutes to release excess moisture. Drain off any liquid by tilting the bowl over the sink while holding the cucumbers back with a clean hand or a perforated ladle.
  • Dress the cucumbers: Combine sugar, vinegar, and soy sauce with the cucumbers, mix well using chopsticks or a wooden spoon. Add 1 teaspoon of chili crisp, adjust seasoning to taste. Serve within 1 hour. Enjoy! Share your feedback below!
