Chef John's favorite summer side: smashed cucumber salad with spicy garlic-soy dressing. Ideal with grilled meat or shrimp.
Ingredients:
  • 2 English cucumbers
  • 1.5 teaspoons kosher salt, plus more as needed
  • 1 teaspoon white sugar
  • 2 cloves garlic, finely crushed
  • 2 tablespoons seasoned rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • red pepper flakes to taste
  • 2 teaspoons toasted sesame seeds
Instructions:
  • Wrap the cucumbers in plastic wrap to prevent splattering. Use a flat object, like a meat pounder, to gently crack and flatten them. Unwrap the cucumbers, then halve them and slice into 1- to 1 1/2-inch wide pieces. Place the slices in a strainer over a bowl.
  • Season cucumber with a pinch of salt and sugar, mix well, then chill in a bowl and strainer for 30-60 minutes to drain excess liquid.
  • In a large bowl, combine garlic, seasoned rice vinegar, soy sauce, sesame oil, and red pepper flakes; whisk until well combined.
  • Add the drained cucumbers to the dressing in the bowl and toss gently to coat. Cover the bowl with plastic wrap and refrigerate for approximately 30 minutes to let the flavors blend.
  • Arrange the cucumbers in a beautiful serving bowl and generously sprinkle them with fragrant sesame seeds.
