Spicy-sweet grilled cheese: Roasted poblanos, peach slices, Cheddar, and bacon.
Ingredients:
  • 2 peaches, halved
  • 1/2 teaspoon ground ancho chile pepper (optional)
  • 4 slices sourdough bread
  • 3 oz. sliced sharp white cheddar cheese
  • 1 large poblano pepper, roasted (see “To RoastPoblanos,” opposite) and cut into strips
  • 4 slices crisp-cooked bacon
  • 2 tablespoon softened butter
Instructions:
  • Sprinkle cut sides of peach halves with ground chile (if using) and gently flatten to 1/2-inch thickness. Top 2 bread slices with Cheddar cheese, then add 2 peach halves, half of the poblano strips, and 2 slices of bacon. Finish by adding remaining bread slices and butter both sides of the sandwich.
  • Preheat a skillet over medium heat. Add the sandwiches and cook until the bread is toasted and the cheese melts, about 4 to 6 minutes, flipping halfway through.
