Spring herb smashed potatoes roasted to crisp perfection after being boiled. A must-try technique that elevates the earthy flavors.
Ingredients:
  • 12 chat potatoes
  • 1 large garlic clove, finely chopped
  • 40.00 ml finely chopped flat-leaf parsley
  • 20.00 ml fresh thyme leaves, finely chopped
  • 20.00 ml basil leaves, finely chopped
  • 150g fresh ricotta or cream cheese
  • 12 slices Italian prosciutto
  • 50g watercress
Instructions:
  • Preheat the oven to 240C and prepare a baking tray by lining it with baking paper.
  • Bring a large saucepan of salted water to a boil. Add the potatoes and cook for 15 minutes until tender. Drain thoroughly.
  • Place the potatoes on the lined baking tray. Flatten each potato with a potato masher, ensuring it holds its shape. Brush with olive oil and generously season with salt and pepper.
  • Bake the potatoes for 25 minutes, or until they are crispy and golden. Allow them to cool briefly before serving.
  • Combine minced garlic, chopped parsley, fresh thyme, basil, and cheese in a bowl. Top each potato with a spoonful of the herbed cheese mixture and a slice of prosciutto. Garnish with watercress before serving.
