Elevate your mashed potatoes with parsnips for a flavorful twist and added nutrients.
Ingredients:
  • 3 lb small unpeeled red potatoes, cut into 1-inch cubes (8 1/2 cups)
  • 1 lb parsnips, peeled, cut into 1-inch pieces (3 cups)
  • 4 cloves garlic, peeled
  • 1 cup half-and-half
  • 6 tablespoons butter or margarine
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons chopped fresh chives
Instructions:
  • Preheat your oven to 400°F and generously spray a 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In a 4-quart Dutch oven, combine potatoes, parsnips, and garlic. Pour in just enough water to cover the vegetables. Bring to a boil, then simmer uncovered for 15 to 20 minutes until potatoes and parsnips are fork-tender. Drain and return to the Dutch oven.
  • Combine half-and-half and 4 tablespoons of butter with the potatoes and parsnips, mash vigorously until creamy. Stir in salt and pepper, then transfer to a baking dish. Top with remaining 2 tablespoons of butter.
  • Wrap in foil and bake for 20-25 minutes until piping hot. Finish by sprinkling with fresh chives.
