Delicious pork cutlets paired with flavorful grape salsa is a must-try for a new favorite dish!
Ingredients:
  • 2kg kent pumpkin, deseeded, peeled, cut into 2cm pieces
  • Olive oil spray
  • Salt & freshly ground black pepper
  • 350g seedless green grapes, picked, halved lengthways
  • 1 small fresh red chilli, halved lengthways, deseeded, thinly sliced
  • 62.50 ml small fresh mint leaves
  • 27.30 gm extra virgin olive oil
  • 20.00 ml white balsamic vinegar
  • 4 (about 200g each) pork loin cutlets, french trimmed
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with non-stick baking paper. Arrange the pumpkin slices in a single layer on the tray. Lightly coat them with olive oil spray and season with salt and pepper. Roast in the oven for 20 minutes or until soft. Once done, transfer the roasted pumpkin to a large bowl and gently mash with a fork.
  • Combine fresh juicy grapes, spicy chillies, fragrant mint, high-quality oil, and tangy vinegar in a bowl.
  • Grease a non-stick pan with olive oil spray and heat over medium heat. Cook the pork for 4-5 minutes on each side until desired doneness. Place it on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Plate the pumpkin slices, then layer on the pork cutlets and salsa for a delicious presentation.
