Spicy roast tomato salsa

Easy homemade salsa with sweet grape tomatoes for a tangy kick. Skip the store-bought version!
Ingredients:
  • 3 x 250g punnets grape tomatoes, halved
  • 1/2 small red onion, finely chopped
  • 1 tsp chopped fresh red chilli
  • Pinch of caster sugar
Instructions:
  • Preheat the oven to 180°C. Line a large baking tray with non-stick baking paper and arrange the tomato halves, cut-side up, on the tray in a single layer.
  • Bake until soft and lightly browned, then let cool for 30 minutes before serving.
  • In a medium bowl, mix together the tomato, onion, chilli, and sugar. Season with salt to taste before serving.
