Curried potatoes with spicy tomato sauce recipe

Spice up roast potatoes with an Indian twist for a flavorful side dish.
Ingredients:
  • 750g sebago potatoes, roughly chopped
  • 56.88 gm extra virgin olive oil
  • 4 garlic cloves, crushed
  • 7.50 gm mild curry powder
  • 1/2 tsp cracked black pepper
  • 171.60 gm tomato sauce
  • 10.40 gm hot chilli sauce
  • 1/4 tsp garam masala
  • Pinch cayenne pepper, to taste
Instructions:
  • Preheat your oven to 220C (200C fan-forced). Line a large baking tray with parchment paper and place the potatoes on it.
  • In a small bowl, mix oil, garlic, curry powder, and cracked pepper. Drizzle the mixture over the potato and toss to coat evenly. Season with salt. Bake for 45 minutes or until the potato is golden and crisp.
  • Mix together sauces, garam masala, and cayenne pepper in a small bowl, then drizzle the flavorful sauce over the potato.
