Savory Indian spiced ground turkey and potato curry with onions, tomatoes, and peas. Ready in just 40 minutes!
Ingredients:
  • 3-4 Tbsp vegetable oil (or ghee or coconut oil)
  • 1 pound ground turkey (thigh meat if you can get it)
  • 1 chopped onion
  • 1-2 chopped fresh red chiles (optional)
  • Salt to taste
  • A 1-inch piece of peeled ginger, grated fine
  • 2 garlic cloves, minced (about 2 teaspoons)
  • 1 Tbsp garam masala (or curry powder)
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 cup water
  • 2 large Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 2-4 Roma or other plum tomatoes, diced
  • 1 cup fresh or frozen peas
  • 1/2 cup (loosely packed) chopped cilantro or parsley
Instructions:
  • Brown the ground turkey in a large pot with a lid over medium-high heat, using vegetable oil. Spread out the meat in the pan to avoid overcrowding and cook without stirring until it starts to brown.
  • Add the chopped onion and chiles to the pan. Sauté for 4 to 5 minutes until the onion starts to caramelize. Season with salt.
  • Introduce the flavors: Incorporate the freshly grated ginger and garlic into the mix, sauté gently for 1 to 2 minutes until fragrant.
  • Combine the garam masala, turmeric, cumin, and coriander with water and potatoes in a pot. Cover, simmer on medium-low heat for 15 to 20 minutes until potatoes are tender.
  • Gently fold in the diced tomatoes and peas once the potatoes are tender. Ensure everything is well combined, cover, and let it cook for 2 to 3 minutes. Season with salt to taste, if necessary.
  • Just before serving, fold in the freshly chopped cilantro. Enjoy with flatbread, white rice, or on its own.
