Curried lentil and pumpkin soup

Spiced lentil and pumpkin soup with flavorful curry.
Ingredients:
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 5.00 gm Madras curry powder
  • 375.00 ml dried red lentils
  • 1.75kg butternut pumpkin, peeled, seeds removed, and chopped
  • 1275.00 gm vegetable liquid stock
  • natural yoghurt, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, heat oil until shimmering. Add onion and garlic, sauté until soft for 2 to 3 minutes. Mix in curry powder and stir for 30 seconds.
  • Combine lentils, pumpkin, and stock in a pot. Mix well and bring to a boil. Reduce heat to medium-low and cook, partially covered, for around 20 minutes, stirring occasionally until pumpkin is tender.
  • Top with a dollop of natural yoghurt and serve right away for a delicious finishing touch.
