Curried Cream of Any Veggie Soup

Vegetables simmered in broth, thickened with skim milk and flour for a creamy low-fat soup.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 tablespoon curry powder
  • 4 cups chicken broth
  • 4 cups chopped mixed vegetables
  • 2 tablespoons all-purpose flour
  • 2 cups nonfat milk
Instructions:
  • In a large saucepan over medium heat, heat oil. Saute onion and garlic until tender. Stir in curry and cook for 2 minutes, stirring constantly. Add broth and vegetables, bring to a boil, then simmer for 20 minutes until tender.
  • Whisk flour into milk until smooth, then blend into the soup. Cook until the mixture thickens. Season generously with salt and pepper.
