Curried pumpkin gratin

Elevate classic veggie bake with a touch of curry.
Ingredients:
  • 300ml thickened cream
  • 10.00 gm curry powder
  • 5.00 gm cornflour
  • 1/2 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp fresh thyme leaves, finely chopped
  • 800g kent pumpkin, cut into 2cm pieces (see note)
  • 125.00 ml pizza cheese, grated
  • Extra fresh thyme leaves, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and grease a 6cm-deep, 13cm x 19cm oval ovenproof dish with care.
  • Heat cream in a small heatproof jug in the microwave until warmed through. In a bowl, mix curry powder and cornflour, then whisk in 2 tablespoons of the warm cream to form a smooth paste. Slowly whisk in the rest of the cream. Add onion, garlic, thyme, and season with salt and pepper.
  • Arrange the pumpkin in the dish and generously pour the velvety cream mixture over it. Securely cover with foil to seal in all the delicious flavors.
  • After baking uncovered for 30 minutes, sprinkle the dish with cheese and continue baking for an additional 20-25 minutes until the pumpkin is tender and the cheese is golden. Before serving, top with extra fresh thyme leaves.
